eating words...

When catching up with friends, you tend to eat out... and its so easy to use too much money very quickly...

Just eating out with friends, movies, snacks, and stuff like that costed me ~$60au (460hkd) yesterday afternoon -.-! Thats...


It's now, by hindsight, a really good idea that im learning cooking now; im improving! For now, i'm learning cutting skills:

Cutting skills effects the taste and the edibility of the food greatly. The thickness of the meat, tofu, or vegetable (or whatever) effects the amount of surface the food has... surface is very important in cooking- firstly, when on a pan, only one surface can be cooked at a time; secondly, there's the absorbtion of sauce or seasoning... maybe there are other points too...

If you cook, you can explore this by cutting your meat/vege in different ways... For pork cutlets, for example, you can slice the surface of the meat in a criss cross manner (like 'x') at a depth of approx 0.5cm... After cooking the meat, the browning should reflect this pattern... and the sauce/seasoning should penetrate more into the meat (but too much knife work could mean a lost of water content in the meat)...

To do more work, I need a sharper knife though... I mainly use a meat cleaver (if you dont know what this is and you know hk stuff... it is the knife the gangsters use to fight each other!) but often it takes much movement of the meat to make a cut...
